My chilli tastes irony after adding scotch bonnet chillis..is it ok to eat?

I am a former chef and worked in Jamaica, and still do alot of Jamaican cooking both meat wise and vegetarian, and scotch bonnet peppers do have a bit of a minerally taste, it is not bad you may have to adjust your seasonings.
